Sesame Noodles with Pork

    Sesame Noodles with Pork and Veggies.  You can always change out any of the veggies or the meat.  You can even  make it vegetarian and skip the meat all together.


     1lb lean pork sliced into one inch slices.


    2 carrots grated
    1 bunch of green onions sliced
    3 stalks of celery sliced
    3 cloves of garlic grated
    2Tbs ginger grated.


    One box whole wheat pasta boiled to al dente, I did not add salt when boiling. The soy sauce added later will be plenty of salt for the dish. After you drain the pasta add about a tablespoon of oil to the pasta (I used Canola) to make sure the noodles don't stick together.


    1 tbs red pepper flakes
    2 tbs sesame oil
    1/4 cup of soy sauce

    The soy is the only salt in the dish (I did not salt the pasta when boiling it)



    Put about 2 tbs of oil into your wok and get it well heated. Then add the pork and quickly stir fry until all pork is pretty much opaque. Then add chili flakes and some ground black pepper to season the pork.


    Once the pork it totally opaque add the veggies and the grated ginger/garlic.


    Stir fry all the ingredients and add the sesame oil and soy sauce.


    I added about a 3 tbs of water to give the sauce and pork some time to cook through.

    Add the pasta and toss, toss, toss. Let the pasta cook in the sauce for a few minutes and absorb all the sauce. Then serve and enjoy.  Serves 4-6.

Taco Cornbread Casserole

    Here is an easy weeknight dinner.


    Step 1: Brown your favorite ground meat (Beef, Chicken or Turkey) and add diced onion and green bell peppers.  **I used ground chicken. I also made it very convenient by using frozen diced onion and peppers. So I did not even have to pull out a cutting board for this dish.


    Step Two: Season with 1 packet of Taco Seasoning, a tablespoon of red chili flakes, tsp of garlic powder. Season with salt and pepper to taste.


    Add
    1 drained can (15oz) of corn kernels (I used the no salt added kind)
    1 drained and rinsed can of black beans
    1 can of diced tomatoes
    1 cup of your favorite salsa


    Mix all ingredients and simmer for 5 minutes. Check for seasoning here. I actually added some chili con carne powder to jazz the flavor up.


    Now get your cornbread topping ready. I used on box of Jiffy corn mix. You can just make it according to the box instructions or dress it up.   I added some egg substitute, 1 cup of cottage cheese, a splash of milk, 1tbs of Dijon mustard and one cup of shredded cheddar cheese.


    In a baking dish put the taco filling in an even layer


    Then cover it with the cornbread filling in an even layer and top with more shredded cheese.


    Bake for 20 minutes at 400 degrees or until the cornbread is baked and set.


    Enjoy. I served it with a simple green salad.

Spicy Hoisin Chicken


    This chicken has a wonderful Asian flavor.   Not only does it taste great, but  it is an easy dish that anyone can quickly put together.


    Here is what you will need:
    1/2 cup Hoisin sauce
    1 tbs peeled fresh ginger (finely grated)
    4 garlic cloves (minced)
    1 tsp red pepper flakes ) or to taste. I added 1tbs
    1/2 tsp Toasted sesame oil
    1 tbsp soy sauce
    1 tbsp rice vinegar (seasoned)
    2lbs chicken thighs or breasts. I used boneless/skinless chicken, but you can use bone in chicken too.


    Mix all marinate ingredients together.


    Pour over chicken and cover completely. I marinated mine for 4-5 hours.



    Place chicken apart on a foil lined baking sheet. Pour all extra marinate on top of each piece. Sprinkle with sesame seeds.


    Bake at 450 degrees for 30 minutes or until chicken is cooked through.



    Enjoy. Serve with Rice or a Vegetable side.

Lemon and Cherry Trifle


    LEMON BERRY TRIFLE


    Ingredients:
    One box of Lemon Cake mix
    One box of instant vanilla flavored pudding
    One package cream cheese
    One tub of cool whip or home-made whipped cream
    One can cherry pie filling

    Directions:
    1. Bake lemon cake per box instructions. If you can bake in two 8 inch round baking pans. I did this and then later cut each cake around the middle to create four round layers to fit easily into my trifle bowl. Otherwise bake in a rectangular pan and cut into slices or cubes to layer in the trifle bowl.

    2. Mix pudding per directions then mix in the cream cheese (it will be easier to mix this if you leave the cream cheese at room temperature for about a hour to soften). Once the pudding and cream cheese are mixed and smooth gently fold in a 1/3 of the cool whip.

    3. Time to layer all your ingredients. First start with one layer of the lemon cake. Next top it with a layer of the pudding/cream cheese mixture. Now another layer of cake. Now put a layer cherry pie filling. Repeat with Cake and pudding mixture and then cherry pie filling. Finally top off cake with the cool whip. Allow the trifle to be refrigerated at least 8 hours before serving.

Confetti Fried Rice

    This is a quick fried rice. You can use this method and adjust to your taste. I used all fresh veggies this time. But I have used frozen mixed veggies (peas carrots, green beans etc..) in this dish as well.

    ** To make it a one pot meal you can add ground lean meat and fry it before adding the veggies or you add eggs.


    Chop:
    1 onion (not pictured)
    1 bunch green onions

    Grate:
    3 large carrots
    1 tbs grated ginger
    1 tbs grated garlic

    Cook rice and have it waiting. I added chicken broth instead of water when I cooked the rice in my rice cooker. I also used a brown basmati rice. You can use any fluffy kind of rice you want. I do recommend the basmati variety because of it's nutty flavor. I will use about 8-10 cups of cooked rice in the fried rice.


    Heat 1tbs of oil and 1tbs of butter.

    Add:
    cinnamon stick
    curry leaves- available in Indian/Asian Markets
    3-4 cardamom pods
    3-4 cloves

    Note:
    If I ever use cardamom, cloves or cinnamon sticks make sure you discard these items before eating or avoid eating them. They are very strong tasting and are used just to flavor the food, but not so nice if you eat them alone. The curry leaves can be eaten... they are tasty. : )


     Add: All the vegetables and garlic/ginger and saute'. 


    Add: 1/2 tsp of turmeric and salt. Saute' until veggies are tender.


    Add cooked rice and incorporate well. Check for salt.  Serves 4-6 people as a main dish.

    Chocolate Covered Strawberries
    Ingredients

    * 6 ounces semisweet chocolate, chopped
    * 3 ounces white chocolate, chopped
    * 1 pound strawberries with stems (about 20), washed and dried very well

    Directions

    Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)

    Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.

    Set the strawberries aside until the chocolate sets, about 30 minutes.

Chickpea and Rice Pilaf

    The Chickpea Rice Pilaf can be a great main dish because it has plenty of protein and flavor to fill you up.


    The next step is to to cook the rice for the pilaf so it's ready and waiting for you. I used a Brown Basmati rice. You can use the regular white Basmati rice as well. I recommend the Basmati rice because it doesn't stick and has a nutty flavor.

    To give the rice some added flavor, I added half water and chicken broth as the liquid.  If you want to make this totally vegetarian you can just use water.


    To get the aromatics ready for the pilaf you will need:

    One large onion sliced or chopped
    some curry leaves
    1 tbs of cumin seeds
    3-4 cloves
    3-4 cardamom pods
    1 tsp of ground turmeric
    salt to taste
    one cinnamon stick
    1 tbs of grated garlic
    1 tbs of grated ginger
    1 tbs of red pepper flake (or to taste)
    2 tsp of cumin powder


    On medium flame, heat the oil and add the cumin, cloves, cardamom, cinnamon stick and curry leaves. Fry in oil until fragrant. Be careful not to burn the cumin seeds.

    Add turmeric, chili flake and saute'.


    Add cumin powder and saute'.


    Add two (15oz) cans of chickpeas drained and rinsed.


    Add:
    1 can of diced tomatoes,
    2 tbs of lemon juice
    1/4- 1/2 cup of water.

    You only want a little bit of water to cook the ingredients through. You should turn up the heat to about a medium high on the stove so all the flavors have a time to cook. You should taste for salt here.


     Stir in the cooked basmati rice and mix. The rice should get evenly coated with the cumin/turmeric sauce.


    Serves 4-6.

I see GREEN...

    ..green dresses, green boots, green shoes, green hair, green jewelry...all kinds of green stuff. So today it will be a green blog. Lets get started.

    The first green things are my hair from A&A (the hair is a 1L$ item) and the blindfold by POSTAL (which is free). I also got very nice green eyes. They are by Xline.




















    Then I got this lovely green floral dress, it is by W&T. This also will set you back 1 L$.

    Plunge also has a lovely floral dress. Not quite green, but ALMOST green :) The cute hat also is by Plunge.

    At the Plunge store I also found this great cocktail dress.

    Plunge has some really sexy things. What do you think about this latex outfit?

    Or this great catsuit with pawprints? Both latex outfits come in all colors.


    The pumps I am wearing with the dresses and gowns are by Plunge too. It is also a fatpack with all colors inside.
    Talking about sexy: I also found some GREAT green lingerie. WOW ...the first one is by Badoura (it will set you back 1 L$) and I am wearing Pasties with them...yes you see it right: they are clovers for St. Patrick day :) They cost you 1 L$ but you also get free nails to go with them :)

    The other lingerie I found is by Jaqueline.

    And I found these very cute things to wear on your head. They send out clovers, I am wearing them just for the Irish.

    The next set is also called lingerie, I thought it was a cute dress though. Well you can decide what it is and how you want to wear it :) Saucy Lingerie costs 1 L$.
    This dress by Sassy (it is a gift from the VVVH hunt) is soo sexy. I am wearing it with a belt by KKBB and a necklace I got as a group gift from this group: (check notices) Annoying Japanese Children. The shop is called Happy Finds.

    Over to the next green stuff. I found a very nice set of pants with tops. They included a white Tee with some text on it.
    The whole set is also 1 L$.

    Folden has these cute capri pants. They set you back 1 L$. I am wearing them with JD star shoes and with GF tops. I am wearing the green striped top but you also get a blue one.

    The next pants are pants from the green evening gown I am blogging later. I am wearing the pants with a top by KKBB and a cute straw hat. The hats come in several colors.

    I am wearing the shiny green pants with a lovely floral top. The top is by MB creations. The necklace is by Happy finds (see above, join group check notices)


    OK the blog is getting too big. So I will just post one more thing which is not green. But it is a dollarbie which you can ONLY get today (sunday 27th) and I didn't want to waste this one. It is a lovely dress by Petunia.

    Next green stuff you can see tomorrow :)
