Easy Meatloaf - Chicken

    This is an easy Meatloaf to make.  I served it with my Cauliflower/Potato Smash and seasoned green peas to make a balanced meal.


    Let's get started. I used Stove Top Stuffing as the breading inside my meatloaf. The stuffing has herbs and seasonings added into it that make the meatloaf taste great. You can just add the stuffing and go for it. However, I did add some other flavoring to make it my own.



    Grate a small onion
    2tbs of dijon mustard
    1tbs of grill seasoning (basically consists of garlic powder, salt and pepper)
    3 cloves grated garlic
    1 tbs of red chili flakes

    ***one very small pinch of Chinese Five Spice. Now this is optional. But it gives your Meatloaf a "what's that I taste" in the background. Now Chinese Five spice is very strong. I literally used less than the tip of a teaspoon of it. If you are unfamiliar with the taste of Chinese 5 spice I would not suggest you use it until you try it out in a smaller recipe.


    Then add one cup of hot water to the stuffing and seasoning and mixed it well until the stuffing became moist.


    Once the stuffing cooled down, add 2 pounds of ground chicken, 2 eggs (or egg substitute equivalent) and about a quarter cup of Ketchup.  You can add any ground meat you like (ie.. beef, pork, turkey).  Just make sure it is a very lean version of the meat you like.


    Mix all the ingredients until well incorporated.


    You can bake your loaf any way you like. You can free form a loaf like I did here or put it in a bread loaf pan or even a 9x13 pyrex cake pan.  Put it in the oven at 375 degrees for 45-55 minutes. Every oven varies a bit so the cooking time could vary too. If you have a meat thermometer have the internal temp of the middle of the loaf reach 155 degrees.


    30 minutes into the baking I reduced the oven temp to 325 degrees. I also added my sauce/glaze on top of the meatloaf.   The glaze is up to you. You can use just plain ketchup. I used 1/2 cup Ketchup and a quarter cup sweet chili sauce with a very small sprinkle of cumin.  Now back into the oven for the additional 20 minutes of bake time.
