- 1 tsp of rice wine vinegar because it is mild. You can try white or cider vinegar, but it may give a stronger taste/tang to the dish.
- 1 tsp of red chili powder or to taste (available in the Indian Grocers)
- salt to taste
- pepper to taste
You will need one ripe and juicy pineapple. Dole pineapples are very good because they are nice and sweet. I used half a pineapple for this dish.
You need to skin the pineapple, cut out the core and cut it into small bite size pieces. You can add finely diced onion and serrano chili to this dish, but this is totally optional. The pineapple with the seasoning is is terrific on it's own.
Now I really can't give you exact measurements for seasoning because it all depends on your pineapple. My pineapple was very naturally sweet so I did not need to add any sugar. If you pineapple is not as sweet, you can add some sugar to taste.
I added:
Mix all the ingredients together to marinate for 30 minutes. Then taste, taste, taste. I think I ate half the bowl enjoying the "tasting" part. : )
I won't give you a serving here, because I could eat this all on my own. But you can enjoy it as it is or with a meal. If you like salsa type dishes you must try this. Enjoy.
