I love that cranberries are in peak season right now. I thought they would make a wonderful seasonal chutney for any roast meat or even a rice and curry meal. I decided to pair them up with pineapple for sweetness and chilies for spice. This chutney came together in a flash with very little effort. I know this intensely sweet, tart, spicy flavored chutney that looks like a bowl full of lovely holiday jewels will sit proudly on our Thanksgiving table this year.
Ingredients:
1 bag of cranberries (12oz)
4-5 green chiles diced
2 cups of fresh pineapple
2 Tbs of ginger/garlic paste or 3 cloves of garlic and 1 inch of ginger grated
1 small piece of cinnamon
1/4 cup of brown sugar (see note)
1/4 cup of vinegar
1/4 tsp of turmeric
1 tsp of red chili/cayenne powder (or to taste)
salt to taste
Note: Add more sugar as necessary if tart is not your thing. :)
Directions:
Place all the ingredients in a pan and bring to a boil. Simmer for 15-20 minutes until the cranberries pop and the chutney cooks down. Taste for seasoning.
Now onto the awards. My food blog friends have been so generous to me since I started blogging less than a year ago. I cannot believe how giving and supportive they have all been. I would like to give out three awards that I was lucky to receive in the last few months (I know, I'm really far behind giving them out).

Once the chutney is cooked, allow to cool down completely and store in an air tight jar in the fridge for 2-3 weeks. Enjoy.
