Sometimes deciding what to eat for breakfast can become a big debate in my house. My daughter wanted a peanut butter and jelly sandwich and my son wanted pancakes. They were both reasonable requests, but I decided putting the two ideas together would be a much more fun way to enjoy breakfast. They loved the idea and we went to work. The kids love strawberry jam on their PB&J sandwiches so it was easy to make a syrup to mimic the same flavors. The meal was done in a few minutes and I had some very happy kids enjoying breakfast without arguing. Now that's a great way to start the morning. :)
Ingredients for Pancakes:
1 1/2 cups of whole wheat flour
1 1/2 cups of all purpose flour
3 tsp of baking powder
1Tbs of sugar
1 1/2 tsp of baking soda
3 eggs
3 cups buttermilk
1 cup regular (cow's) milk
1- 2 cups of peanut butter chips
pinch of salt
butter for frying
Note: if you do not have peanut butter chips, substitute a cup of peanut butter to the batter.
Directions:
Heat a skillet on medium heat and melt some butter. I melted about 2-3Tbs of butter and put it into a dish so I could easily butter the pan between pancakes. Pour your batter into the skillet to cook like you would a regular pancake. I used a 1/2 measuring cup to try to make the same size pancakes.
Ingredients for Strawberry-Maple Syrup
1/2 cup of maple syrup
1 cup of strawberry jam
1/4 cup of fresh strawberries
Directions:
Place all ingredients in a saucepan and gently heat on medium-low heat and stir occasionally. Serve warm over pancakes.
Makes 10-15 large pancakes. Enjoy.
