I love a good fruit salad. I can eat it for breakfast as a snack or even a dessert. I made this fruit salad for a tropical themed party and it was such a refreshing dish that everyone enjoyed. Any fruit works, eating a whole bowl of fruit is one dish you can feel good about eating. The hint of lime juice, honey and sweet coconut takes it from just eating a bowl of fruit into a tropical party in your mouth.
Ingredients:
1 Pineapple cored and cut into chunks
2 kiwis peeled and cut into chunks
1lb of strawberries hulled and cut into chunks
1 mango peeled and cut into chunks
2-3 bananas peeled and cut into large slices (see note)
1/2 cup of sweetened coconut
Juice of 1 lime
1-2 tsp of honey
Note: Do not add the bananas until you serve otherwise they will get brown and mushy.
Directions:
Mix all the ingredients together and serve right immediately. Enjoy.
