When I am in the mood for a quick and satisfying lunch the easiest thing that comes to mind is a grilled cheese sandwich. Unfortunately, I cannot enjoy a plain grilled cheese sandwich anymore without spicing it up. I need a spicy kick to almost everything I eat so even the good old grilled cheese needs spicing up in my book. I put a layer of my spicy deviled onion sambal on this grilled cheese and it's almost addictive. Actually, I ate one (sometimes 2) every morning for almost 9 months since I was eating for two. Yes, this was my breakfast of choice when I was pregnant with both of my kids. I needed the calcium and since I'm not a fan of gulping glasses of milk, I decided low-fat cheese would fit the bill. I layered three slices of American cheese and it was a ooey-gooey heaven of a breakfast. So when I get a craving for this wonderful spicy sandwich now I only get to eat one sandwich since I'm not eating for two... darn! :)
Ingredients:
1 heaping tablespoon of deviled onion sambal (recipe link below)
2 slices of bread (I like whole grain bread)
2 slices of low fat American Cheese
butter as needed
Directions:
Butter the outside of two slices of bread. Layer a slice of cheese on the inside of one slice, then top it with some deviled onions and another slice of cheese. Top with buttered bread (with the butter facing the outside). Grill both sides of buttered bread in frying pan on medium heat until the bread is golden and the cheese has melted.
NOTE: remember to pull out any cardamoms, cloves and cinnamon stick from the deviled onions before assembling the sandwich. It is not pleasant to bite down on those... trust me I've done it. :)
