Banana Bundt Cake with the Works

    I always say I am not a real baker.  I just like to pretend I'm one from time to time. I am a cook by nature because I like to throw little bits if this and a little bits of that into a batter and put it into the oven with a prayer to see what comes out.  Well, I believe if you put enough good things into a baking pan something good should come out of the oven and that's just what I did with this cake.  I decided to finish up all the fresh cranberries, oats, chocolate chips and flaked coconut that I had leftover from my holiday baking with four  sad ripe bananas.  I could have called this a Banana, Oat, Cranberry, Chocolate, Coconut Bundt Cake, but decided to just call it a Banana Bundt Cake with the "Works".   I put it into the oven with a prayer and my prayers were answered. This cake came out even better than I expected. I loved the chocolate with the tartness of the fresh cranberries and the texture given by the flaky coconut and oats.  When I got two thumbs up from my daughter and my husband decided he wanted a second slice... I knew I had a winner on my hands.

    PS:  For my international friends that are unfamiliar with the phrase "the works" it just means adding everything you can into something.

    Ingredients:
    1 cup of flour
    1 cup of old fashioned oats (not instant)
    1 tsp of baking soda
    1 tsp of cinnamon powder
    1 cup of sugar (or baking splenda)
    1 tsp of vanilla
    4 ripe bananas mashed
    2 eggs
    1/4 cup of buttermilk
    1 cup of chocolate chips
    2 cups of fresh cranberries
    1 cup of baking coconut flakes
    1/2 tsp of salt
    walnuts (optional)


    Chocolate Glaze:
    3/4 cup Chocolate chips
    2 Tbs of milk



    Directions:
    Mash your bananas and mix in the eggs, sugar, cinnamon, buttermilk and vanilla.  Then add your salt, flour, oats and baking soda. Stir gently.  Finally add your chips, cranberries and coconut.  Mix all the ingredients gently without over-mixing.






    Pour into a sprayed or butter bundt pan and put into a 350 degree oven for 45-55 minutes. Bake until a knife comes out clean.








    Allow to cool at to room temperature before adding the chocolate glaze. 



    Pour chocolate glaze over cake and serve.  Enjoy.

Banana Oat and Chocolate Bars

    A crime was almost committed in my kitchen today... my hubby almost threw out some perfectly good bananas thinking they were trash.  I can see why he thought so, they did look pretty bad.  Then I showed him how perfect they were inside.  They were blemish free and perfect for baking. So I decided I needed to bake something he would love with them (to make him feel even worse for wanting to waste them).  So I made these banana oat bars and added a lot of chocolate chips to make them extra yummy.  They came out better than even I expected.  He promised me after eating the first of many bars that he will not throw out any banana before I give the "to bake or not to bake" once over. :)

    Ingredients:          
    Wet:
    1 egg
    1/3 of a cup of applesauce
    3 ripe bananas
    1 tsp of vanilla
    1/2 cup of brown packed brown sugar
    Dry:
    2 cups rolled oats (not instant)
    1/2 cup of whole wheat flour
    1/2 cup of all purpose flour
    1/2 tsp of salt
    1 tsp of baking soda
    1 tsp of baking powder


    Extras:
    1-2 cups of chocolate chips

    Note: I actually did not have enough chocolate chips, so I used leftover white chocolate and peanut butter chips from other recipes.

    Tip:  I keep my chocolate in the freezer.    


    Directions: 


    First mix all the wet ingredients. I used an electric mixer to do this part.  Next stir your dry ingredients together well with a spoon. Fold in your wet ingredients to your dry ingredients and mix gently. 


     
     I decided to put some parchment paper inside my baking dish so I could easily pull out the entire pan of bars and cut them.  Spray parchment paper with some cooking spray before pouring the batter into it.  Bake at 350 degree for 30-40 minutes.  When a knife comes out clean, your bars a done. 



     Enjoy.  Store in an airtight container.

Nutella and Banana Stuffed French Toast

     
    My husband and kids were "Wowing" this breakfast even before they tasted it.  What's even more wonderful is that it's such a simple, fast and healthy breakfast to make.  I love the flavors of banana and nutella together and stuffing those flavors into french toast so it's all warm and melted is even more perfect.

    Ingredients to make one stuffed french toast:
    2 slices bread (any kind, I used 100% whole wheat)
    1 banana mashed
    1 egg beaten
    1 Tbs of whole milk or cream
    Enough nutella to slather on two slices of bread.
    Maple Syrup or Powdered sugar Optional



    Directions:  Beat the egg and milk/cream together then set aside.  Apply Nutella on both slices of bread and sandwich the mashed banana between the two slices.  Dip the bread on both sides to soak up the egg batter (allow to sit in the egg batter for 20-30 seconds so it has time to soak up a lot of egg batter)



    Get a non-stick frying pan or griddle heat on medium-low heat with a little bit of butter.  Allow both sides to cook for several minutes until the egg is cooked though. Repeat steps for additional sandwiches.



    Serve immediately. Optional garnishes are powdered sugar and/or Maple syrup.  Enjoy.

Frozen Banana Pudding Dessert

     It's really hot these days.  100 degree days with heat index of 105 is more than I can handle.  So when my nieces and nephews came over for dinner I knew a frozen dessert would be a perfect ending to any meal.  I was right.  This frozen banana pudding was a hit.   It took a few minutes to put together with some store bought ingredients and I let the freezer do the rest of the work.

    Ingredients:
    1/2 gallon of vanilla ice cream
    5.6oz box of banana flavored instant pudding
    2 cups of cold milk
    2-3 bananas sliced or diced
    1 large box of Nilla (vanilla) wafer cookies
    1 tub of cool whip

    * You will need a container is freezer-friendly.

    Melt the ice cream for a few minutes (about 2) in the microwave.  You want it almost "soupy".  Then add your pudding and 2 cups of milk.  Stir in some chopped fresh bananas and 1/2 a tub of cool whip topping.  You can keep the other half for garnish.   It will look like a soupy mess, but don't worry it will all re-freeze.
    Start with a layer of wafer cookies.
    Pour a 1/3 of the soupy ice cream/pudding mixture over the first layer of cookies and repeat the cookies on top.  Then repeat with the ice cream mixture and the cookies again.  End with a final layer of the ice cream/pudding mixture.  ** you will have three layer of cookies and three layers of ice cream/pudding mixture.
    Allow the dessert to sit in the freezer overnight until it is set.  Take out of the freezer for 10-15 minutes before serving to thaw just a bit so it is easy to serve.





    Garnish with more sliced bananas and cool whip topping.  Enjoy.

Banana-Blueberry Bread with Surprise

    Okay, this recipe came out of my ideology "waste not, want not".  I had blueberries and bananas that needed to be used soon.  I wasn't even sure if the "black" bananas were unusable until I peeled them.  But they were perfect for banana bread and that's just what I did.  I made banana bread with blueberries.  Of course I couldn't just leave it at that.  I had to add something to make it more special.  How about a cream cheese little surprise.  This recipe is pretty healthy (diabetic friendly) and simply delicious. So next time you see some sad looking bananas that look like they may need to hit the trash.... take a peel and see what you can come up with... this banana-blueberry bread may be in your future too.

    Wet Ingredients:
    2-3 bananas mashed
    1 cup sugar (or splenda)
    2 tsp of vanilla
    1 tsp of ground cinnamon
    2 large eggs
    ½ cup of applesauce
    1½  cups fresh blueberries

     Dry Ingredients
    1 cup whole wheat flour
    1 cup all-purpose flour
    ½ tsp of baking powder
    1 tsp of baking soda
    ½ tsp of salt


    Surprise cream cheese filling:
    6oz of softened cream cheese
    1 egg

    Mix the two ingredients together until creamy.




    Directions:  Separately mix the wet and dry ingredients.  Combine the wet and dry ingredients together and do not over mix the batter.  Fold in the blueberries.  Spray or butter a loaf pan.  Flour the bottom of the pan with some flour.  Pour half the batter into the pan.  Next spread the cream cheese filling in the middle.  Top off with the remainder of the batter.  Bake in a 350 oven for 45-55 minutes or until bread is done.   Allow to cool and slice.  Enjoy.
