Strawberry-Peach Tea Smoothie

    Sri Lanka (formerly known as Ceylon) produces some of the best quality teas in the world. Although this country is small it is the 4th largest producer of tea worldwide.  I was given a chance to try the Aura brand of Ceylon Teas by Almar Teas.  Aura Teas come in a wonderful array of flavors from lemon, mint, strawberry, green and of course your traditional black tea.  I loved all the flavors and I was excited to try to make a recipe with the Strawberry tea.   I decided to pair this beautifully fragrant strawberry tea with peaches.  Now peaches are still not in season here in the US so I bought frozen peaches for my recipe.  The frozen peaches actually worked great because I used them as the ice cubes in my smoothie as well.  I blended this refreshing drink and enjoyed it knowing I was enjoying a smoothie that was full of antioxidants and health benefits.



    Ingredients:
    3 bags of Strawberry Aura Tea
    2 cups of boiling water
    1 cup of cool/ice water
    2 cups of frozen sliced and skinned peaches
    sweetener of your choice to taste (sugar, splenda, honey, or agave- I used agave)


     


    Directions:

    Boil 2 cups of tea and steep three tea bags for 3-5 minutes. Then add 1 cup of ice water to cool the tea down. Place tea, peaches and sweetener into blender. Blend until smooth. Makes 3-4 servings. Enjoy.

50 Calorie Iced Cafe Mocha

    I love to enjoy a frozen coffee drink from time to time, but I'm always paranoid that I'm getting far more calories and sugar than I would like in just a beverage.  I also find fancy coffee store drinks completely over priced (I'm known to be frugal!).  I am not a coffee connoisseur so coffee is just coffee in my eyes.  So what is a frugal and health conscience girl supposed to do?  Grab her blender of course!   I was completely blown over by this homemade version of an iced cafe mocha and it was only a whooping 50 calories! Even my husband who likes only hot coffee drinks thought it was pretty darn tasty.  He could not believe it was as low calorie as it was. If you love coffee drinks and want a way to save money and fit into your jeans,  get those blenders ready!

    Ingredients:
    3 cups almond milk (35 calories a cup)
    2 Tbs of Hershey's Unsweetened Cocoa (10 calories a Tbs)
    1-2 Tbs of Instant Coffee (trace amounts of calories)
    Sugar free sweetener- I used Splenda  (trace amounts of calories)
    1/2 cup of hot water
    1 tray of ice (about 16 cubes)
    lite whip cream (optional)
    Cinnamon Powder (optional)
    Sugar-Free Lite Chocolate Syrup (optional)


    Directions:
    Boil 1/2 cup of hot water. Add sweetener, chocolate powder and instant coffee to hot liquid and stir until everything is well mixed. Add a few ice cubes into the hot coffee mixture to cool it down. Then put all ingredients (except for optional ingredients) in blender and blend until smooth. Top with any optional ingredients you like. Drink immediately.    Enjoy.
    Note: If you want a stronger drink add 2Tbs of instant coffee and only 1Tbs for a lighter coffee drink.  Adjust your sweetener to taste.


    This makes about 8-9 cups of ice cafe mocha.  Serves 3-4 people. The entire blender contained less than 150 calories making it less than 50 calories a serving

    Now I must share some random facts about myself... hmmm... this should be interesting:

    1. I don't know how to ride a bike.  Okay... this shocks people sometimes.  I don't usually tell people because when I worked  I told my co-workers during a team building exercise and they all laughed hysterically. The truth is I was never really interested to learn as a kid (although my older siblings all know how to).  Now that I'm a middle aged, I really don't see the point of learning.  My hubby has begged me several times to let him teach me.  I have gotten on an adult bike and freaked out... so I would need the biggest set of training wheels ever!  When someone says "it's just like riding a bike"... that certainly doesn't put me at ease. :)  Okay.. stop laughing.

    2. I went almost a decade without ever baking a cookie... yes... it's a long sad story of rock hard hockey puck cookies.  I finally found my cake mix method and now I'm even feeling confident to venture to scratch made someday soon. :)

    3. I am on the hunt to buy a good/affordable DSLR camera. I am a big researcher so I like to get everyone's opinion.  Please if you have some advice, help a girl out. :)

    4. I hate cilantro.  Yes, I'm one of those people that just can't eat the stuff and for years I thought I was the only one.  Now I realize there so many of us out there and I feel an instant kinship to those that don't like it either.

    5. I love historical dramas and some of my favorite movies are Sense and Sensibility and Pride and Prejudice both by books from Jane Austen.  I am also a big fan of the proverbial "chick flick". :)

    6. I am deathly afraid of any kind of reptile. The worst thing is in the past few years my garden gets invaded by some freaky lizards in the spring and summer because I planted a low growing ivy that they love. If I had known all those years ago when I planted that darn ivy... I would have certainly changed my mind.  I literally look outside before I walk out so I can scan to see if I see a lizard "sunning" itself on my front step.  I have been known to wear winter boots to go get my son from school (yes even in May and June) so I won't feel a lizard touch me.   

    7. I collect a lot of things (no I'm not a hoarder... although my husband may think so). I mostly collect cookbooks, mortar and pestles and cool crockery.  I am trying to curb my impulse to buy these things when I see them.  I have succeeded in the crockery and the mortar and pestles... but those darn cookbooks!  It's hard when new cookbooks from my favorite authors keep coming out.  I recently purchased The Pioneer Woman's New Frontier cookbook.... Yes... it's a sickness. :)

Banana, Date and Almond Smoothie

    I love the versatility of dates because you are only limited by your own imagination.  So far,  I have made sweet and savory dishes with my large bag of dates.   Now what else could I use them in... how about a healthy smoothie?  My kids didn't care for the dates plain, but I was determined to get them to try it somehow.  So being the sneaky mother that I am,  I offered to make them a smoothie after school.  They didn't question me about the secret ingredient and they loved it.  Score one point for Mommy on this one-- trust me I don't win all the picky eater battles. These smoothies are super healthy and a great snack or breakfast. As eager as I was to finish up my bag of dates, now I'm getting sad that I'm getting close to the end of the bag just when it started to get fun finding fun ways to use them up. Hmmmm.. maybe I should buy another bag. :)
       
     Ingredients:
    1 cup of pitted dates
    1 ripe banana
    3-4 cups of unsweetened almond milk (substitute soy or regular milk)
    1/2 cup of plain yogurt
    some freshly grated nutmeg (or a pinch of ground nutmeg)
    a pinch of ground cardamom powder
    1/2 cup of ice (optional)
    whip cream (optional)

    Directions:
    Put all the ingredients into a blender and blend for 1-2 minutes until smooth.  Serve immediately. Enjoy.

Pina Colada Punch

    A tropical a drink is not only for hot summer days... it's for any day that you want to bring some sunshine into your life.  This Pina Colada Punch does exactly that with the refreshing taste of pineapple and the creamy coconut.  I made this punch non-alcoholic since I was making it for both children and adults. Of course you can add rum if you like for an adult only crowd. Life should always be a party, enjoy a fruity drink and do the conga.

    Ingredients:
    1 (20oz) can of pineapple chunks in pineapple juice (see note)
    1 (46oz) can of dole pineapple juice chilled
    1 (8oz)can of cream of coconut (available in the Hispanic Foods Aisle)
    1/2 gallon of vanilla ice cream
    1 liter bottle of lemon/lime soda
    rum to taste (optional)

    Note:  I recommend taking the can of pineapple and it's juice and put it into a jell-o mold then freeze it. Take it out of the mold by warming up the sides and place the frozen pineapple ring into the punch bowl to keep the punch cold without watering it down with ice cubes.  As it melts chunks of pineapple will float in the punch to enjoy.

Candy Cane Milkshake

    Let the Christmas Countdown begin!  Christmas day is only a few days away and I'm just as excited as my young kids. It's not the visit from Santa that I'm awaiting so excitedly, but all the yummy treats and parties that we are going to enjoy this week.   I wanted to start off the week with something very fun and festive, my Candy Cane Milkshake.   My husband and kids went a little crazy over it so I hope you try it and enjoy it too.  It's a great way to use up some of those candy canes... so start smashing them and enjoy!
    PS.. Santa may enjoy a milkshake as well...  :)  HO!HO!HO!

    Ingredients:
    7-8 scoops of ice cream
    1/4 cup of crushed candy canes
    1/2 cup of water
    1/2 cup of milk
    1/2 tsp of mint extract (optional)
    whip cream 
    crushed candy canes for garnish






    Directions:
    In a small saucepan heat your 1/2 cup of water and crushed candy canes.  Allow to boil until the candy canes are fully melted.  This should take a few minutes.  Then allow the "candy cane simple syrup" to cool down. 





     In a blender add your ice cream, milk, candy cane simple syrup, mint extract and a 2 tsp of crushed candy canes.  Blend well until smooth.






     Pour into a glass, top with whip cream and more crushed candy canes and enjoy.   Merry Christmas!

Sunshine Sherbet Punch

















    We were in full party mode today.   Our little princess was celebrating her birthday and she wanted it to be magical from start to finish.  Well, who am I to deny a birthday girl her wish?  So, this Sunshine Sherbet Punch was one of the many pretty things we had for her birthday.  This punch was a big hit with the kids and the adults.  I made 2 punch bowls worth and it was all gone by the end of the night.  Well, who would say no to a punch that has a lot of ice cream in it. Mmmm... yes it was as good as it sounds.

     Ingredients:
    1 tub of 1/2 gallon vanilla ice cream
    Citrus Juice such as V8 Splash (use any citrus punch you like here)
    1 large bottle of mango juice
    Ice (as needed)
    Lemon/Lime Soda (such as 7up or Sprite)
    Juice of 1-2 limes (as well as some for garnish)
    1 bottle of pineapple juice (I also added some pineapple tidbits from a can to make it more fun for the kids)

    Note:  This is more a method than a definite recipe.  Make it to your taste. 

    Stir all ingredients well.  You don't have to melt all the ice cream immediately into the punch.  Allow some of it to gradually melt to show there is ice cream in the punch bowl.

    Serves a Party.  Enjoy!

Mango Ice Tea with Ginger

    Ice Tea is a quintessential summer drink.  But it can sometimes use a little razzle-dazzle.  I love mango juice so why not pair the two together.  The hardest part in making this drink is waiting for the hot tea to cool down and then chill so I can sit outside and sip it while watching the clouds roll by...

      Ingredients:
    5-6 cups of water
    8 black tea bags
    3 cups of mango nectar (juice)
    juice of two lemons (plus some to garnish with)
    Sugar or splenda (1/2 cup to 1 cup or to taste)
    a few slivers of ginger or 1-2 slices

    Bring the water to boil with the ginger.  Once the water has boiled add the tea bags and allow to steep for 5-10 minutes.  Then add your sugar or splenda and stir well.  Strain or pull out the ginger and allow the tea to cool down.  Once the tea is cool add the lemon juice and mango nectar.  Serve over ice and garnish with more lemon sliced or mint.  Enjoy.

Blueberry-Lemon Ice Tea



    Summer vacation is in full swing and my kids and I decided that we needed to make something  fun to drink.  Who wants plain ice tea when you can jazz things up with blueberries that are full of antioxidants and brain-boosting vitamins.  


    Ingredients: 
    2 cups of frozen blueberries
    5 cups of water
    1/2 cup of fresh lemon juice (2-3 lemons worth)
    1/2 cup up to a 1 cup of sugar or sugar substitute (depending on how sweet you like it)
    plenty of ice

    Bring frozen blueberries, 1 cup of water and 1/2 a cup of lemon juice to a boil in a saucepan. Stir occasionally.  Remove from heat.
    Pour the blueberry mixture through a wire-mess strainer and use a spoon to squeeze out the juice.  Discard the blueberry solids that do not go through the mesh.
     In the same saucepan that you made boiled the blueberries, heat 4 cups of water.  Once boiling, turn off the stove and add 4 teabags.  Allow tea to steep for several minutes and then remove the teabags.  Pour tea into pitcher with the blueberry mixture.  Add a lot of ice.  Allow to chill and serve with ice.  Enjoy.

Pina-Colada Smoothie

    A Pina-Colada Smoothie screams summer.  Can't you just imagine yourself sipping this cool drink pool side?  Well, I've got 90 degree weather and no pool so I guess I'll just enjoy what I can have... this  refreshing drink.   I made my version non-alcoholic, but you can always add some rum and have yourself a little party.

    Clean, core and cut one pineapple.  You will want about 3-4 cups of fresh pineapple for this smoothie.

    I used:
    1 cup unsweetened coconut milk
    1 cup unsweetened almond milk
    1/2 cup ice cubes
    1/2 cup rum (optional)
    Sweetner (see note) 

    Note:  you can also add sugar, honey or agave syrup to sweetened your drink if you like.  My pineapple was very sweet for me, but my husband wanted his with a little sugar. I personally like mine with a squeeze of fresh lime juice.  I suggest if you like it with a squeeze of lime you add it to your glass and not the whole pitcher.


    Blend all ingredients in a blender with the pineapple until it's a smooth drink and serve.   Makes about 4 servings.

Watermelon Cooler

    It's that time of the year when all the wonderful summer fruits start coming back into our lives.  Watermelon is one of the most popular summertime fruits and sometimes we end up with so much of it that we need ways of using it up.  I created this refreshing summertime cooler to enjoy on warm summer nights.  



    To make the Watermelon Cooler you will need:
    3 cups seedless watermelon
    4 cups lemon/lime soda (ie.. Sprite or 7up)
    1/2 cup of fresh lime juice
    sugar as needed (optional)
    ice (optional)
    Mint (optional)


    Blend all ingredients until smooth.

    Note 1:  You can blend with ice or add ice later.
    Note 2:  You can make this cooler alcoholic by adding some vodka or rum.
    Note 3:  Sugar is optional because it all depends on your taste and the sweetness of the watermelon you have picked.
    Note 4:  You can also give it a minty twist by blending some sprigs of fresh mint into the drink.

    Serves 4 people.  Garnish with watermelon slices and fresh mint.  Enjoy.
