I love to get a little help from the store when I am in a rush to make dinner. So when Pillsbury Grands Biscuits were on sale I stocked up. Now I had to come up with different and exciting ways to use them. Well, it wasn't hard. I created these Taco Cups and they were really fantastic. My kids loved how fun they were to eat and they were a lot less messy than eating tacos the traditional way.
To start you will need to make your filling. You can brown 1 pound of any lean ground meat you like. I used ground chicken. Once the meat is brown, add:
2 jalapenos seeded and chopped
1 onion chopped
Fry until onions are soft (about 2-3 minutes).
Then add
1 packet of Taco seasoning (about 3Tbs)
1 tsp of ground cumin
1 tsp of garlic powder
1 tsp of red chili flakes (or to taste)
Salt and Pepper to taste
Fry for another 1-2 minutes.
And one can of diced tomatoes. Saute for another 3-5 minutes. Taste for seasoning.
Turn off stove and allow the Taco filling to cool down a little bit. Now get your Grands Biscuits.
I used extra large muffins pans to make my taco cups. The muffins pans are called "Texas Size Muffin Pan". You will need to stretch a grands biscuit and gently mold it inside each muffin hole. Now put some taco filling inside each cup and top with shredded cheese. I used a Mexican blend of cheese.
Bake at 400 degrees for about 15 minutes or until biscuits are fully baked and the cheese is melted.

You can make 16 Taco Cups if you use 2 grands biscuit tubes. I could only make 12 Taco Cups with the muffins pans I had so I flattened the remaining biscuits and made pizza tacos. These were also very good. I hope you try this method with other types of filling like pizza filling etc.. Enjoy.
