My kids love strawberries and I was planning on doing a strawberry shortcake for dessert. But it was hot yesterday and the last thing I wanted to do was turn on the oven. So this no bake strawberry cheesecake was my tribute to the strawberry shortcake. Everyone loved the fresh strawberries used in the cheesecake and the light and refreshing taste. My husband and kids said this cheesecake was a real winner... I'll take that compliment. : )
To make this Cheesecake you will need:
One ready made graham cracker pie crust
1 8oz cream cheese at room temperature (reduce fat is fine)
1 tub of cool whip topping
1/2 cup of sugar (or splenda for low sugar version)
1 cup of chopped fresh strawberries and more to garnish pie

Use an electric mixer and beat the softened cream cheese and the 1/2 cup of sugar until it is light and fluffy. Then add half a tub of cool whip (reserve the other half for the garnish) and the 1 cup chopped strawberries. You will want to fold in the cool whip and strawberries (do not use the electric mixer for this step).
Pour the cheesecake filling into your store bought graham cracker pie crust and refrigerate for 6-8 hours or overnight for best results. (Do not garnish until it's time to serve)
Garnish with the remaining cool whip and fresh strawberries. Slice and serve.
Serves 6-8 people. Enjoy.
