Peaches are in season and that makes me happy. I love these juicy little gems. Unfortunately, my peaches started to ripen very fast in my fruit bowl so I had to come up with some creative ways to use them up. This sweet and spicy peach chutney was at the top of that list. It compliments any rice and curry meal or goes well with grilled fish, pork and chicken.
To get started you will need about a pound of ripe peaches and some green chilies (serranos).
You will also need:
1 small onion finely chopped
2 serrano chilies seeded and finely chopped
1 small piece of cinnamon
1/4 cup of sugar
1/4 cup of vinegar
1/4 tsp of turmeric
1 tsp of red chili/cayenne powder (or to taste)
salt to taste
You will need to skin the peaches. To do this very easily, you must bring some water to boil. Once the water is boiling turn off the stove and place your fresh peaches into the hot water for about 2-3 minutes. Then take them out of the water and the skin should peel away very easily. Chop up your peaches and place in a bowl with any juice that the have until you finish the next step.
In a pan place all the ingredients and allow to simmer on medium heat for 15-20 minutes. Make sure you stir periodically so the chutney does not stick to the pan.

Once the chutney is done cooking allow to cool well. I suggest allowing the flavors to develop in fridge overnight before you serve it for best results. Enjoy.
